Recipe for HOT BRINJAL PICKLE
Ingredients
- 1 kilo brinjal
- 2 tbsps red chili powder
- 15 garlic cloves
- 1 tsp Cumin (seeds)
- 1 1/2 cups Vinegar
- 1 tsp black pepper
- 1 tsp turmeric
- 30 grams Ginger
- 2 1/2 cups Mustard Oil
- 6 tbsps Mustard seeds
- 4 tbsps Salt
Cooking Directions
Cut brinjals into cubes Rub salt well and leave for 10 hours in the sun
Grind together garlic, ginger, mustard and cumin seeds. Add vinegar and mix well
Squeeze out all salt water from the brinjals. Rub turmeric, chilies and pepper and add vinegar mixture
Put in a jar and pour mustard oil over it
