Recipe for TOMATO PICKLE
Ingredients
- 2 kilos firm ripe tomatoes chopped
- 110 grams Fresh ginger clove, grated
- 10 Green chili (chopped)
- 1/2 cup Garlic chopped cloves
- 1 cup Sugar
- 1 1/2 cups Vinegar
- 1 cup Oil
- 1 tbsp turmeric
- 3 tbsps Cumin (seeds)
- 2 tbsps Chili powder
- 2 tbsps Mustard seeds
- 1 tsp Salt
Cooking Directions
Soak mustard seeds in vinegar overnight. Then grind to a paste along with ginger and garlic
Heat oil in a large pan until smoking point. Cook slightly. Add cumin, turmeric, chili powder. Stir and fry for few seconds
Add tomatoes and chilies
Pour in the vinegar mixture. Add salt.
Reduce heat and simmer until oil begins to separate Cool and put it in jar
