Recipe for Middle Eastern Falafel
Ingredients
- 1 cup Chickpeas or Garbanzo Beans.
- Oil for frying
- 1 large Onion, chopped
- 3 tablespoons of fresh Parsley, chopped
- 2 cloves of Garlic, chopped
- 1 teaspoon Cumin
- 1 teaspoon Coriander
- 2 tablespoons Flour
- Salt to taste
- Pepper to taste
Cooking Directions
Place one cup of canned chickpeas in pan with fresh water, and bring to a boil.
Boil for five minutes more, then let simmer on low for about an hour.
Drain water and allow to cool chickpeas.
Make a thick paste of Chickpeas, Garlic, Onion, Coriander, Cumin, Salt, Pepper and flour in a food processor.
Now make small Balls of this mixture.
Fry in oil until golden brown.
