• 5 kilos green mangoes
• 2 tbsps Salt
• 3 tbsps red chili powder
• 50 grams fenugreek seeds
• 50 grams aniseeds
• 2 tbsps Black pepper
• 1 tsp Turmeric
• 1 tsp Cumin (seeds)
• 2 tbsps Onion seeds
• 1 tsp nutmeg powder
• 5 Cinnamon 1 inch stick
• 4 cups vinegar
• 4 cups oil
• 6 blades mace

Peel and grate mangoes

Keep mace, vinegar, cinnamon and nutmeg separately

Add remaining ingredients to the grated mangoes.

Mix well and put it in a jar overnight

Next day coarsely grind mace and cinnamon and add it to the mango mixture with nutmeg and vinegar Mix thoroughly

Cover with oil Ready to use
