Recipe for PALAK MAKI KA SABJI
Ingredients
- Spinach, finely chopped 3 cups
- Onion, finely chopped 1 1/2 cup
- Tomatoes, finely chopped 2 cups
- Corn 1 cup
- Green chilli 4
- Ginger paste 1/2 tsp
- Turmeric powder 1/2 tsp
- Chilli powder 1 tsp
- Cumin-coriander powder 1 tsp
- Garam masala, a pinch
- Mango powder(amchur) 1/4 tsp
- Cardamom powder(elaichi powder) 1/4 tsp
- Cumin seeds 1/2 tsp
- Bay leaves 1
- Oil 3 tsp
- Butter 1 tsp
- Salt to taste
Cooking Directions
Heat 2 tsp of oil in a cooking pan. Add onions and salt. Fry onions until they turn golden brown.
Add green chillis and tomatoes. Fry until tomatoes are cooked.
Add spinach and cook for another 3 minutes
Keep the mixture aside. Once it cools, grind the mixture.
Heat 1 tsp of oil in a pan and add cumin seeds. Once cumin seeds splutter, add ginger paste and bay leaves and fry for about 3-5 seconds.
Add corn and fry for about 5 minutes.
Add turmeric powder, chilli powder, cumin-corriander powder, amchur powder and garam masala. Cover and cook for about 5 minutes.
Add the ground spinach paste and cook for about another 10 minutes.
Add cardamom powder and butter, take off from heat.
Serve hot with Roti/Chapati/Paratha or Rice/Jeera Rice
