Recipe for Vegetable Korma
Ingredients
- 3 carrots
- 3 Kashmiri chilies
- 3 onions
- 4 boiled potatoes
- 4 green chilies
- 8 small cardamoms
- 8 Almonds
- 10 broad beans sliced
- 1 cup peas
- 1 cup Oil
- 1/2 cup yogurt
- 1 tsp crushed black pepper
- 1 tsp hot spices powder
- 1 tbsp ginger garlic paste
- 1 tbsp poppy seeds
- 2 tsps rice flour
- 2 tbsps coriander seeds
- to taste Salt
Cooking Directions
Crush 4 boiled potatoes and boil 3 Kashmiri chilies with very few drops of vinegar. Now mix boiled potatoes with 4 sliced green chilies 1 tsp crushed black pepper, salt to taste, and 2 tsp rice flour.
Make small round balls like koftas and shallow fry. Also mix fried 3 chopped carrots, 10 fine sliced beans and 1cup peas. Crush together 2 tbsp coriander seeds and boiled Kashmiri chilies.
In a pot heat 1 cup oil and sauté 3 fine cut onions until it gets brown.
Spread the fried onions on a sheet so that it will absorb the oil, then crush the fried onion and mix with the ½ cup yogurt. In a cooking pot mix red chili dip, 1 tbsp ginger garlic paste, 1 tsp hot spices powder and salt to taste.
Now put the sauté vegetables and mix for few seconds. Add 8 small cardamoms, 1 tbsp poppy seeds and 8 almonds and mix thoroughly.
Top it with potato balls and let it cook. When oil separates in a layer, vegetable korma is ready to serve with raita and nana.
