Recipe for Rajhistani Paapri Kari
Ingredients
- Gram flour 200 gm
- Yogurt ½ kg (sour)
- Turmeric 1 tsp (chopped)
- Whole cumin ½ tsp
- Dried mango Powder ½ tsp
- Tomato paste 2 tbsp
- Garlic paste 2 tbsp
- Red chili powder 2 tbsp
- Oil 2 tbsp
- Coriander for garnishing
- Paapri as required
- For Paapri:
- Fine flour 2 cup
- Cumin 1 tsp (roasted)
- Clarified butter 3 – 4 tbsp
- Oil for frying
- Salt to taste
Cooking Directions
For Paapri:
In a bowl add fine flour, turmeric, salt and clarified butter, mix it and knead hard flour.
Now roll the big shape roti and cut it with cutter.
Then heat the oil in wok and golden fry the paapri and place it open air.
When it gets hard then put into the wok.
For Kari:
In a mixing bowl add gram flour, sour yogurt, tomato paste, red chili powder, chopped turmeric, chopped coriander and salt, mix it properly to prepare a mixture.
Now in a skillet heat oil and put cumin, red chili powder and garlic paste and cook it properly.
Now add prepared gram flour mixture in it and cook it properly.
When the spices get fried then add water and cook it on low flame for 2 – 3 minutes.
Then mashed the paapri and put into the mixture with dried mango powder, fry it for 2 – 3 minutes.
In the end garnished with coriander and serve it.
