Recipe for Spice Roghani Chicken
Ingredients
- Chicken leg piece ½ kg
- Onion (boiled) 1
- Spring onion 1
- Lemon 2
- Dry chilies (boiled) 6 – 7
- Water 1 cup
- Oil ¼ cup
- Cabbage boiled ¼ piece
- Tomato paste ½ cup
- Chili powder 1 tsp
- Red food color ½ tsp
- Cumin powder ½ tsp
- Turmeric ½ tsp
- Ginger garlic paste 2 tbsp
- Oil for fry
- Salt to taste
Cooking Directions
Marinate chicken drumsticks with lemon juice and a little salt.
Deep fry till golden brown.
Boil 1 onion and ¼ piece of cabbage.
Put boiled cabbage, boiled onion, 1 spring onion, ½ cup tomato paste and 6 – 7 boiled red chilies and a little water in grinder.
Grind finely to a smooth paste.
Heat ¼ cup oil in a wok, add 2 tbsp ginger garlic paste and fry till golden brown.
Now add vegetable paste and half cup water. Fry for 1 – 2 minutes.
Add 1 tsp chili powder, ½ tsp turmeric, ½ tsp ground cumin, salt to taste and ½ tsp red food color. Cook for 4 – 5 minutes.
Now add fried chicken drumsticks, cover and cook for 8 – 10 minutes.
Then remove lid, fry well till water dries, dish it out and serve.
