Recipe for Schezwan Chicken
Ingredients
- Chicken boneless ½ kg
- Salt to taste
- Garlic paste 1 tbsp
- Chinese salt ½ tsp
- White pepper powder ½ tsp
- Soya sauce 2 tbsp
- Worchester sauce 2 tbsp
- Tomato ketchup 4 tbsp
- Corn flour 1 ½ tbsp
- Button red chilies boiled 6 – 8
- Water ¼ cup
- Tomato 1
- Lemon juice 1 ½ tbsp
- Capsicum 1
- Oil 3 – 4 tbsp
Cooking Directions
Blend together 6 – 8 boiled red chilies, 1 tomato and ¼ cup water. Blend to a fine paste.
Heat 3 – 4 tbsp oil in a wok, add 1 tbsp garlic paste and saute for a few seconds.
Now add ½ kg chicken cut into strips, saute till golden brown.
Add prepared paste, 2 tbsp soya sauce, 2 tbsp Worchester sauce and 4 tbsp tomato ketchup. Cook for 1 – 2 minutes.
Then add salt to taste, ½ tsp white pepper, ½ tsp Chinese salt, 1 chopped capsicum and 1 ½ tbsp lemon juice.
Mix well and cook for 2 – 3 minutes. Lastly thicken mixture with corn flour paste.
Dish it out and serve with fried rice or plain boiled rice.
