Recipe for Lauki Kofta Curry

Ingredients

  • Bottle gourd ½ kg
  • Onion chopped 1
  • Black cardamom 2
  • Green chilies chopped 3
  • Boiled tomatoes 3
  • Bay eaves 2 – 3
  • Cloves 8 – 10
  • Cumin seeds crushed 1 tsp
  • Turmeric 1 tsp
  • Chili powder 1 tsp
  • Coriander powder 1 tsp
  • All spice powder 2 tsp
  • Ginger garlic paste 2 tbsp
  • Coriander leaves 2 tbsp
  • Gram flour 4 tbsp
  • Oil 3 – 4 tbsp
  • Water 1 – 1 ½ cup
  • Oil for fry
  • Salt to taste

Cooking Directions

Peel ½ kg bottle gourd and cut each into 4 pieces, remove pulp and grated the thick part of bottle gourd.

Add in 4 tbsp gram flour, 2 tsp all spice, salt to taste and 1 tbsp ginger garlic paste. Mix well, make small balls and keep aside.

Heat oil and deep fry balls till golden brown, remove from oil and keep aside.

Heat 3 – 4 oil in a wok, add 1 chopped onion and fry till golden brown.

Add in 1 tbsp ginger garlic paste, 2 – 3 bay leaves, 2 black cardamoms, 8 – 10 cloves and 3 boiled chopped tomatoes.

Then add 1 tsp crushed cumin seeds, 1 tsp turmeric, 1 tsp coriander powder and 1 tsp chili powder. Fry for few seconds.

Now add 1 – 1 ½ cup water, cover and boil for 3 – 4 minutes.

Add fried vegetable balls and 3 chopped green chilies, fry for few minutes on high flame.

Lastly add 2 tbsp coriander leaves and a little all spice. Dish it out and serve hot.
