Recipe for Brinjal Pickle
Ingredients
- Brinjal, medium size – 4 nos
- Chilly Powder – 2 tbs
- Medium size Tomatoes – 3 nos
- Oil – 5 tbs
- Tamarind – 1 gooseberry size
- Curry leaves – 20 nos
- Asafoetida – 1/4 tsp
- Turmeric powder – 1/4 tsp
- Salt to taste
Cooking Directions
In a pan heat the oil and add chilly powder, turmeric powder, curry leaves and stir for few seconds.
Now add sliced brinjal, tomatoes and cook for 5 minutes.
Add the extract of tamarind and stir, when it is cooked add asafoetida and salt, mix well.
While stirring the brinjal pieces should not be smashed.
