Recipe for MIXED VEGETABLE PICKLE
Ingredients
- 1 kilo Carrots diced
- 1 kilo turnips
- 1 kilo cauliflower
- 1 kilo radish
- 4 cups Mustard Oil
- 225 grams Garlic
- 225 grams Ginger
- 225 grams mustard seed
- 60 grams cardamoms
- 60 grams Cinnamon 1 inch stick
- 225 grams salt
- 600 grams Red Chili Powder
- 2 cups Vinegar
Cooking Directions
Cut vegetables into bite size pieces
Wash and place in a large vessels and pour boiling water over it for 20mins
Drain well and keep in sunlight for one day
Heat little oil and saute’ all vegetables for 4mins
Grind garlic and ginger
Boil all remaining oil and remove from heat
Heat little oil and fry ginger and garlic,until brown
Add remaining oil with all dry masalas, chili, salt and vinegar mixture
Cool it and add vegetables It will be ready for use after 3days
