Recipe for EGG MASALA CURRY
Ingredients
- Eggs 4
- Onions 2 medium
- Tomatoes 4 medium
- Green chilli 10
- Coriander leaves, finely chopped 2 tbsp
- Turmeric powder, a pinch
- Oil 2 tbsp
- Cumin powder 1/2 tsp
- Coriander powder – 1/2 tsp
- Ginger-Garlic paste 1/2tsp
- Garam masala powder 1 tsp
- Salt 2 tsp (or as required)
- Red chilli powder 2 tsp ( or as required)
Cooking Directions
Chop onions, tomatoes and green chillies into fine pieces and keep aside
Put eggs in a vessel and add water until the eggs are completely immersed. Boil for 10 minutes. Take off from heat and cool for 10 minutes. After cooling, remove the shells of the eggs
Take each egg and cut a slit in the egg, length-wise and about half deep
Heat oil in a cooking pan. Add ginger-garlic paste and fry for 10 seconds. Add onion and green chilli pieces
Add turmeric powder and 1 tsp salt and fry for about 5 minutes or until onion pieces turn slightly brown
Add tomato pieces, red chilli powder and stir. Cover and cook for 10 minutes
Add 1 cup of water and cook for about 5 minutes. Add more water if required if the gravy is too thick. If the gravy is too watery, let it cook until the water evaporates and the required consistency is obtained
Add cumin powder, coriander powder, garam masala powder and stir. Taste for salt and chilli powder and add more if required.
Add boiled eggs and cook for another 5 minutes. Take off from heat and garnish with coriander leaves.
Serve with hot jeera rice
