Recipe for Chicken Kabsa


  • Chicken 8 to 10 piecces
  • 4 Green cardamom
  • 2 to 3 Cinnamon sticks
  • 1/2 tsp All spice powder
  • 1/2 tsp Black pepper
  • 1/4 tsp Nutmeg
  • Basmati rice 2 cups ,wash and soaked inwater for 3 minutes
  • Oil cup
  • Medium sized onion 1 sliced
  • 2 garlic cloves
  • Lemon slices 4-5
  • Tomato paste 2 tbsp
  • Salt to taste
  • Raisin 2tbsp
  • water 4 to 5 cups

Cooking Directions

Heat oil in a pan and add , a cup of onions , 2 cloves of garlic then add chicken, tomato paste ,salt, green cardamom, cinnamon, all spice ,black pepper nutmeg and 4-5 cups of water and allow to cook on low flame.

When stock is ready then separate chicken from stock.

Now add soaked rice in prepared stock and cook.

When rice tender then add lemon slices, 1 tbsp of raisin and then keep on simmer for 5 to 10 minutes

Grill chicken in other pan.

Dish out rice on serving dish and decorate the roast chicken on rice.

Garnish with few raisins and serve hot.
