Recipe for Chilli Chicken And Noodles
Ingredients
- Peanut oil 1 tsp
- Egg noodles (thick) 375gm
- Eggs (lightly beaten) 2
- Peanut oil 1 tsp
- Chicken (minced) 450 gm
- Ginger (grated) 1 tbsp
- Garlic (crushed) 2 cloves
- Chili sauce (mild and sweet) 2 tbsp
- Fish sauce 2 tbsp
- Chicken (stock) 1/2 tsp
- Cornflour 1 tsp mixed in 1/2 cup of water
- Fresh Coriander (chopped) 2 tbsp
- Fresh Mint (chopped) 2 tbsp
- Shallots (sliced) 4 green
Cooking Directions
Cook noodles in a pan of salted boiling water for about 2 minutes or until tender, drain, rinse with cold water and drain well.
Heat oil in wok and add eggs, swirl around base of wok to form a thin omelet.
Cook until set, remove, roll omelet firmly, cut into thin slices.
Heat extra oil in wok and add combined chicken mince with ginger and garlic.
Stir-fry until mince is cooked.
Add sauces and blended stock, cornflour and water.
Stir until mixture simmers and thickens slightly.
Add noodles, omelet strips, herbs and shallots.
Cook while stirring until hot.
