Recipe for Bitter Gourd Stuffed with Mince Meat
Ingredients
- Mince meat ½ kg
- Bitter gourds 8
- Oil 1 cup
- Tamarind pulp 1 cup
- Onions 2 (sliced)
- Fennel seeds 1 tsp
- Turmeric powder 1 tsp
- Ginger garlic paste 1 tbsp
- Red chili powder 1 tbsp
- Onion seeds ½ tsp
- Jiggery ½ tbsp
- Green chilies to taste
- Salt to taste
Cooking Directions
Peel off the skin of unwashed bitter gourds and marinate with salt to taste, turmeric powder and jaggery for half an hour.
Wash with cold water and put on a sieve to drain away excess water.
In a cooking pot, heat ½ cup oil and saute 2 finely sliced onions until they are transparent.
Then add mince meat, ginger garlic paste, red chili powder, turmeric powder, onion seeds, fennel seeds and salt to taste and stir together.
When water dries up, add fried onion and green chilies to taste and cover the pot to allow simmering for 5 minutes.
Remove from flame and let the mince meat mix cool.
Stuff bitter gourds with the mixture and tie a thread around them.
In a pan, fry stuffed bitter gourds and then place them in the same cooking pot in which mince meat was cooked.
Also add tamarind pulp and jaggery and allow simmering for 10 to 15 minutes.
When oil forms a separate layer.
Stuffed Bitter Gourds are ready to be served with naan.
