Recipe for Desi Chicken Karahi
Ingredients
- Chicken 1 kg
- ½ cup olive oil OR any other oil
- 1large piece of ginger
- 1½ small garlic OR whole 1 if large
- 1 tomato
- ¾ teaspoon salt
- ¾ teaspoon red chili powder
- ¾ teaspoon crushed red chilies
- 1/3 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1teaspoon corriander powder
- ¾ teaspoon garam masala powder
- ½ cup yogurt
- 1 medium size onion
Cooking Directions
Chop peeled onions in chopper and put in a wok with oil for frying till pink in color
Meanwhile chop ginger and garlic in the same chopper.
add tomato to fried onions and cook till it gets softened
When tomato gets softened, add salt, chilies, cumin seeds, coriander & turmeric powders, and let them roast a bit with tomatoes, when the oil is a bit separated add chopped ginger and garlic.
Roast ginger and garlic for a while, not much but until aroma is felt.
Add chicken to the wok and let it cook on low heat with lid on. no need to add water.
Take a little piece of ginger and cut it in matchsticks shape(julienne cut)
Keep checking the chicken, it will release its water and cook in it.
When it appears cooked then increase the flame and let the gravy get thickened. now don''t cover it.
Beat the yogurt and add it to the chicken when its gravy is thickened.
Stir it nicely and let it cook till the yogurt is cooked and gravy gets thickened again.
Add garam masala and cook on high heat till the oil is separated and the color gets darkened.
When the chicken looks roasted add green coriander and 3-4 green chillies. Cook for a min and then turn off the flame.
Sprinkle the julienne cut ginger and cover the lid.
No need to cook this ginger, its flavour and aroma will be blended in the gravy just by the existing heat.
