Recipe for Vegetarian Spicy Rice
Ingredients
- 720 gm basmati rice
- 200 gm blanced carrots
- 200 gm blanched beans
- 200 gm blanced peas
- 200 gm boiled cauliflowers
- 10 gm royal cumin seeds
- 30 gm butter
- 3 tablespoon oil
- 30 gm butter
- 2 tablespoon ghee
- 500 gm raw and 150 gm golden fried onion
- 2 green chilies slit in the middle
- 2 teaspoon long slitted ginger
- 20 gm ginger-garlic paste
- 400 gm whisked yogurt
- 40 gm chopped coriander
- 2 tablespoon chopped mint leaves
- Salt according to your taste
- 1 teaspoon red chili powder
- 2 teaspoon lemon juice
- 2 teaspoon cardamom powder
- Few drops of rose water with saffron thread mixture
- 2 teaspoon garam masala
- 25 gm whole cashew
Cooking Directions
Wash rice and soak it in the water for half an hour. Now remove excess water from it and cook it on a low flame.
Heat oil-butter in a pan. Sauté royal cumin seed on low flame now fry all blanched vegetables on low flame.
Add green chili, ginger and garlic paste in it then fry it on low flame. Keep it in mind that this preparation doesn’t gets burnt.
Add whisked yogurt, golden brown friend onion, coriander, mint, salt, lemon juice and red chili powder to it. Now simmer it for 1-2 minute on low flame.
Add cooked rice in it. Pour screw pine juice, saffron mixture, cardamom powder, coriander, garam masala powder in it and pour desi ghee on it. Covering the lid cook it for 1-2 minutes on dim flame.
Put this preparation very carefully on a serving dish. Now you can serve it hot with mint, coriander and fried golden onion pieces.
