Recipe for Chicken Veg Pulao
Ingredients
- 250 grams Rice
- 300 grams Chickpeas
- 2 cups Chicken (cut into small pieces)
- 3 cups Chicken Stock
- 1 Onion sliced
- 4 tbsps Oil
- 1/2 tbsp Ground Cumin
- pinch Saffron ( mix with2 tbsp of water)
- 1 tbsp Ground Coriander
- 1 Red Pepper chopped
- 3 Bay Leaves
- 50 grams Sultanas
- 3 Garlic crushed
- 2 tbsps Parsley chopped
- 50 grams Cashew nuts
- to taste Salt
Cooking Directions
Heat oil in a large pan add chicken, coriander, and cumin, and fry over a medium heat for 5 minutes
Remove from pan and set aside.
Lower heat, add 2 tbsp of oil,onion, red pepper, and garlic, and fry until softened.
Stir in rice add chicken and pour three quarters of stock.
Add bay leaves and saffron and bring to the boil.
Simmer until the rice is almost cooked (adding more stock as needed).
Add chickpeas and sultanas and cook until rice is tender.
Serve with chutney or raita
