Recipe for Suji ka halwa

Ingredients

  • 250 grams suji semolina in english
  • 200 grams Clarified butter (Desi ghee)
  • 50 grams almonds
  • 50 grams pistachios
  • 50 grams coconut crushed
  • 50 grams currants
  • 1 cup Sugar add more if you eat more sweet
  • 1 cup milk
  • 1/2 tsp saffron
  • 1 tsp edible yellow color

Cooking Directions

Put 2 glasses of water, sugar and color in a dish and mix it to make colored water.

Heat clarified butter in a sauce pan, add sooji in it while keeping it on low flame and stirring continuously.

If you think that the clarified butter is less, then add more.

Cook it till it turns golden while stirring continuously and you see a layer of clarified butter on top.

Then add a glass of water in it and keep it on low flame. Mix water properly in it while stirring the sooji up and down.

Put colored water in the sooji in little quantities stirring continuously

When it is dry enough, taste it to check the sugar, if sugar is less according to your taste, then add 1/2 cup more sugar in it.

Now add saffron, coconut, almonds, currants and pistachios in it.

Again stir it properly. When it is dry, add milk in it allowing it to cook.

Add 1/2 cup water in it and keep it to cook on low flame keeping the lid on the sauce pan.

After 10-15 mins, close the flame, The halwa is ready.
Garnish it with pistachios, almonds and coconut.
