Recipe for Iranian Chelo Kebab with Rice
Ingredients
- Mince ½ kg
- Onion ground ½ cup
- Ginger paste 1 tbsp heaped
- Salt 1 tsp heaped
- Black pepper ½ tsp
- Butter 2 tbsp
- Soda bicarbonate ¼ tsp
- Ingredients for Rice:
- Rice ½ kg
- Butter 3 tbsp
- Saffron ½ tsp
- Water 2 tbsp
- Tomatoes 2
Cooking Directions
Method for Kabab: Marinate mince with ground onions, ginger paste, salt, black pepper, butter and soda bicarb. Leave for 30 minutes,.
Then shape into long seekh kabab.
Now grill for 10 minutes. Lower a piece of burning charcoal and add a few drops of oil over it; cover immediately.
Serve with rice.
Method for Rice: In a large pot boil rice with salt until ¾ of the rice is cooked.
Then drain water and put the rice back in the pan.
Spread butter on top of the rice.
Sprinkle saffron mixed with 2 tbsp water and simmer for 10 minutes.
Remove from heat, dish out the rice in a large platter.
Garnish with grilled tomatoes and kebabs.
