Recipe for Corn Masala Rice

Ingredients

  • 1 Cup Brown Basmati or other Long Grain rice
  • 1 Cup Fresh Corn Kernels
  • 1/4 Cup Cashew nuts (Chopped)
  • 2 Tbsp Ghee or Oil
  • 1 Tbsp Cilantro (chopped)
  • 2 tsp Salt
  • 1 tsp Chilli Powder
  • 1 tsp Sambar powder
  • 1 tsp Sugar
  • 1/2 tsp Cumin seeds
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Garam Masala
  • 1/4 tsp Turmeric Powder
  • Juice of 1 Lemon

Cooking Directions

Heat the Ghee or oil in a heavy bottomed pan.

Add the Cumin and Mustard seeds. When they splutter, add the cashew bits and fry until they turn golden brown.

Add the corn kernels and spice powders. Stir fry until the corn is tender.

Add the Rice and fry till it turns pink.

Transfer the rice mixture to an electric rice cooker. Pour 2 cups of water and add the salt.

Mix well and cook until done.

Add the lemon juice and sugar. Mix well, garnish with cilantro and serve hot with yogurt.
