Recipe for Peas Soup
Ingredients
- 1 '' cups dried split green peas, rinsed
- 1 chopped onion
- 1 diced carrot
- 1 stick chopped celery
- 1 small russet potato cut into pieces
- 2 garlic cloves
- salt
- grounded black pepper
- 4 cups fat-free and low sodium chicken or a vegetable broth
- 2 cups water
Cooking Directions
Heat little canola oil in a large pot and saute garlic, onion, carrot and celery for 3-5 minutes until it softens.
Add potatoes, broth, water, salt, pepper and dried split peas. Bring it to boil for 5 minutes
Cover the pan and simmer at intervals for 45 minutes in a low medium flame.
Cool the soup and blend it in the blender to make a thick and smooth paste.
The low fat split peas soup is ready. Serve it hot with a bread or bread stick.
