Recipe for Peas Soup

Ingredients

  • 1 '' cups dried split green peas, rinsed
  • 1 chopped onion
  • 1 diced carrot
  • 1 stick chopped celery
  • 1 small russet potato cut into pieces
  • 2 garlic cloves
  • salt
  • grounded black pepper
  • 4 cups fat-free and low sodium chicken or a vegetable broth
  • 2 cups water

Cooking Directions

Heat little canola oil in a large pot and saute garlic, onion, carrot and celery for 3-5 minutes until it softens.

Add potatoes, broth, water, salt, pepper and dried split peas. Bring it to boil for 5 minutes

Cover the pan and simmer at intervals for 45 minutes in a low medium flame.

Cool the soup and blend it in the blender to make a thick and smooth paste.
The low fat split peas soup is ready. Serve it hot with a bread or bread stick.
