Recipe for Vegetable Corn Soup
Ingredients
- 2.5 cups fresh yellow corn
- 1 medium tomato- chopped
- 1 cup green cabbage( finely chopped)
- 1/2 cup finely chopped string beans
- 1 small carrot ( finely chopped)
- 1/2 tbsp cumin seeds (jeera seeds)
- 1/2 tbsp black pepper
- salt to taste
- 1 tbsp cornstarch
- 1 tbsp oil
- 1 tbsp fresh lemon juice (adjust to taste)
- Coriander leaves to garnish (optional)
Cooking Directions
Boil the corn in hot water till they are soft. remove 1/4th of corn from this and set aside
Blend the remaining corn and water into a paste and set aside.
Mix corn starch with cold water and set aside- to form a very thin liquid pasteTake a saucepan, add oil and cumin seeds
Once the seeds start to crackle, add all the vegetables and let them cook for sometime.
To this add 1/2 cup of water and let the vegetables boil for sometime
Once the vegetables are tender add, corn paste, corn starch water, and 2-3 cups of water to it
Mix this well and let this soup boil for sometime
Bring this soup to boil and keep stirring well
Add lemon juice and coriander leaves on top and serve hot with some lovely appetizers like Bruschetta or samosas
