Recipe for Samosa
Ingredients
- 1 cup flour
- 1/4 teaspoon salt or to taste
- 1 tablespoon oil or butter
- 1/4 cup water
- 1/4 teaspoon cumin seed (optional)
- Ingredients - Filling:
- 1 potato boiled and cut in cubes
- 1/2 teaspoon ginger paste
- 1/4 teaspoon cumin powder
- 1/4 teaspoon chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- 1/2 chopped onion
- 1/2 teaspoon garlic paste
- 1/2 teaspoon coriander powder
- 1/4 cup green peas
- 1 teaspoon green coriander leaves
- Oil
Cooking Directions
Dough
Mix flour with salt and cumin seed.
Add oil and mix well for at least 2 minutes.
Gradually add water and knead for 9 minutes. Brush dough with oil. Cover and set aside for 15 minutes. *
Do not add more water, or the samosa will not be crispy.
Method: Filling
Fry the onions until almost brown. Add potatoes, peas and the spices, mix well for 3 minutes on medium heat.
Turn the heat off and let it cool down.
Making the samosa
Divide dough into 2 portions.
Dust the working surface with flour, take one portion and roll it into a circular shape.
Cut the circle in half and fold the edges to the middle as in pictures 11 and 12.
To form a con, seal the overlapping edges with little water.
Fill the cone with 1 tablespoon of filling, and seal the open side closed with little water. *
Scatter some flour in a plate and let the samosa sit on the edge sealed last. The flour will stop it from sticking to the plate.
Heat oil, and deep fry the samosa. Keep the heat on medium to low.
When they turn golden, remove from oil. Serve with your choice of dipping or ketchup.
