Recipe for Kofta Palak
Ingredients
- For Making Kofta:
- Mutton mince 1 kg
- Onion 1 large (grinned to paste)
- Green chilli 5 (grinned)
- Garam masala powder 1 tsp
- Red chilli powder 1 tsp
- Salt 1 tsp
- Ginger & garlic paste 1 tbsp
- Coriander powder 1 tbsp
- Cumin powder 1 & 1/2 tsp
- Fresh coriander 4 tbsp
- For Making Curry:
- Fresh spinach 1/2 kg (palak)
- Fresh fenugreek leaves 2 small bunches (methi)
- Fresh dill 1/2 bunch (soya)
- Green chilli 5
- Water 1 litre
- Cumin seeds 1 tsp
- Ccloves 8
- Black pepper corn 1/2 tsp
- Cinnamon stick 1 piece
- Black cardamom 2
- Onions 1 large (grind to a paste)
- Yogurt 1 cup
- Ginger & garlic paste 1 & 1/2 tbsp
- Coriander powder 1 & 1/2 tsp
- Cumin powder 1 & 1/2 tsp
- Red chili powder 1 & 1/2 tsp
- Turmeric 1/2 tsp
- Salt 1 & 1/2 tsp
- Garam masala powder 1 tsp
- Milk 1/2 cup
- Green chilli 3
- Oil 1/2 cup
Cooking Directions
To Make Kofta:
In a bowl add mince, onion paste, green chilli paste, ginger & garlic paste, salt, red chilli powder, coriander powder, cumin powder, garam masala powder, fresh coriander and mix well.
Make balls size of a golf ball and keep aside.
To Make Curry:
Cut and wash spinach, dill, fenugreek leaves, green chilli, then place them in a pot with water 1 litre boil it for 15 minutes, discard water and grind it to a paste.
Heat oil add cumin seeds, cloves, cinnamon stick, black pepper corn, black cardamom, onion paste, ginger & garlic paste and fry on high flame till changes colour.
Then add coriander powder, cumin powder, salt, red chili powder, turmeric, yogurt and cook on high flame till the oil comes on the surface.
Now add water 2 cups and bring it to a boil on high flame, then add the kofta and cook on medium to high flame till the water dries.
Add the grinned spinach mixture, milk mix well wait for a boil on high flame first, then cover and cook on medium to high flame till it gets thick (it is your choice how thick or thin curry to keep).
Now add garam masala powder, green chili mix.
Serve hot with rice, paratha or roti.
