Recipe for Mexican Pepper Pot
Ingredients
- Chicken / Beef 500 gms (Cut in cubes)
- Oil 4 tbsp
- Tomatoes 2 medium (cut in cubes)
- Onions 250 gms (chopped)
- Garlic 1 tsp (crushed)
- Paprika 2 tbsp
- Salt to taste
- Water 1 liter
- Sweet corn 1 cup
- Red chilies whole 4 to 6
Cooking Directions
Take a pan and brown the meat in hot oil over a high flame.
Add in it chopped onion crushed garlic, paprika, salt and fry for few minutes over a low heat.
Then add water and cover the pan over medium heat for 1 hour.
In between add red whole chilies and tomatoes also.
When the meat is tender and a little gravy is left, add sweet corn and cook for only 5 minutes.
Serve hot with boiled rice.
While using chicken use water very less 1 cup and time duration 15 minutes.
