Recipe for Roasted Bell Pepper Crostini
Ingredients
- 8 to 10 slices of french bread [20 mm (3/4" thick)]
- For the topping:
- 1 cup shredded capsicum (red, green and yellow ), cut into short strips
- 1/2 cup finely chopped onions
- 1 large clove grated garlic (lehsun)
- 1/2 tsp sugar
- 1/4 cup mozzarella cheese or cooking cheese , cut into short strips
- 4 stuffed green olives , sliced
- 2 tbsp olive oil or oil
- Salt and freshly ground black pepper (kalimirch) powder to taste
Cooking Directions
For the topping:
Heat the olive oil and saute the peppers, onions and garlic over very low heat till they caramelize lightly.
Add the sugar, salt, pepper and saute for 2 to 3 minutes.
Remove from the flame and cool completely.
How to proceed:
Top the pepper mixture, cheese strips and olives generously onto the French bread slices, arranging them decoratively.
Bake in a pre-heated oven at 200°C (400°F) for 3 to 4 minutes or until the cheese has melted.
Serve hot.
