Recipe for Rangeen Qeema Bhigaray Rice
Ingredients
- Beef Mince ½ kg
- Ginger garlic paste 1 tbsp
- Onion 2
- Big cardamom 3-4
- Fennel seeds 1 tbsp
- White cumin 1 tbsp
- Coriander seeds 2 tbsp
- Cinnamon 2-3 sticks
- Badyan flower 2-3
- Clarified butter ½ cup
- Salt to taste
Cooking Directions
Take ½ cup clarified butter in the pan and sauté 3-4 big cardamom, 1 tbsp fennel seeds, 2 tbsp coriander seeds, 1 tbsp white cumin and 2-3 sticks of cinnamon.
Now add in 1 tbsp ginger garlic paste and 2 onions.
Also add ½ kg mince in it. Cook it.
When the color of the mince changes take it out of the pan.
Now put ½ cup clarified butter in the pan and add in onion till it is golden brown.
Take out half of the onion and keep the remaining in the pan.
Add in 1 tsp black pepper, 8 small cardamom, 3 bay leaves and 6-8 green chilies. Cook it for 2-3 minutes.
Add in mince and 1 cup beaten yogurt.
When the yogurt is cooked and clarified butter separates then add in stock.
When the stock comes to boil add in ½ kg rice and cover the pan and cook.
When the water of the rice dries, add in remaining brown onion and a pinch of yellow food color.
Simmer it, dish it out and serve.
