Recipe for Achari Qeema Paratha
Ingredients
- Chicken mince 200gm
- Yogurt 100 gm
- Ginger garlic paste 1 tbsp
- Onion 1
- Red chili flakes 1 tsp
- Crushed cumin ½ tsp
- Crushed nigella seeds ½ tsp
- Mustard seeds ½ tsp
- Fennel seeds 1 tsp
- Fenugreek seeds ½ tsp
- Oil 2-3 tbsp
- Salt to taste
- For parathas:
- Flour ½ kg
- Oil 2-3 tbsp
- Clarified butter to fry
- Salt to taste
Cooking Directions
To prepare the parathas:
In 1/2 kg flour add salt to taste, 2-3 tbsp oil and Luke warm water as required.
Knead to form a smooth dough.
For the filling:
Heat 2-3 tbsps of oil in a pan and fry 1 chopped onion.
Now add 1 tbsp ginger garlic paste.
Saute for a few minutes
Add 200g chicken and fry till the color changes.
Add 1 tsp crushed red chilies,1/2 tsp crushed cumin,1/2 tsp crushed nigella seeds, /12 tsp fenugreek seeds, 1/2 tsp fennel seeds ,1/2 tsp mustard seeds and salt to taste.
Cook until the oil comes on top and turn the flame off. Allow to cool
Roll out portions of the dough to form parathas, fill the center of each paratha with the mince chicken filling.
Pinch the ends of the paratha to seal and form a crescent shape.
Heat ghee on a hot griddle and fry the parathas until golden brown.
