Recipe for Aloo Paratha
Ingredients
- Paratha dough
- Salt to taste
- 2 tablespoons chopped coriander leaves.
- 1 teaspoon coriander powder
- 1/4 teaspoon chili powder
- 2 small to medium potatoes.
- 1 tablespoon butter or oil
- 1 teaspoon cumin powder
- 1/4 teaspoon cumin seed
- 1 teaspoon chopped green chili (optional)
Cooking Directions
Boil potatoes in salted water for 20 minutes. Let it cool then mash it with a fork.
Melt butter in a pan and add coriander leaves. Stir for 1 minute, then set aside.
Mix the spices and the fried coriander with the potatoes.
Make a small balls from the Paratha dough. Make similar size balls from the potato mix.
Sprinkle the working surface with little flour and roll a dough-ball to form a circle.
Place a potato-ball on the dough and close it, as shown in picture # 9.
Press the dough with your fingers to form a small circle.
Roll the dough again —sprinkling flour if needed— to a thickness not more than 1/4 an inch.
Add 1/2 tablespoon butter in a pan, place the bread on the pan, and keep on medium heat. Flip when the bottom has dark reddish spots. Repeat the same with the remaining balls of dough and potatoes.
Serve with cold yogurt or cream.
