Recipe for Tropical Fruit Salad with Chili Lime Vinaigrette
Ingredients
- 5 tablespoons white balsamic vinegar
- 3 tablespoons fresh lime juice
- ½ tablespoon sugar
- Salt to taste
- 2 teaspoons red pepper flakes
- ½ cup extra-virgin olive oil
- 1 large firm ripe mango, peeled and cut into ½ -inch cubes
- 1 pound pineapple, peeled cored and cut into ½ -inch cubes
- 1 medium red onion, thinly sliced
- 1 small red pepper, thinly sliced
- 1 cup cilantro leaves, chopped
Cooking Directions
Whisk together vinegar, lime juice, sugar, salt, and red pepper flakes until sugar is dissolved.
Add the oil in a thin stream, whisking until emulsified.
Add remaining ingredients and toss until coated.
Serve chilled.
