Recipe for Papadi Chat
Ingredients
- For Papadi:
- Flour 2 cups
- Salt ½ tsp
- Oil 1 tbsp
- Oil for frying
- Other Ingredients:
- Date and tamarind chutney ½ cup
- Green chutney ½ cup
- Yogurt 3 cup (whipped)
- Chat masala 1 tsp
- Salt ½ tsp
- Chili powder 1 tsp
- Cumin 1 tsp (roasted and crushed)
- Potato 2 (boiled and cubed)
- Fresh coriander for garnishing
- Sev for garnishing
- For Date Tamarind Chutney:
- Dates ½ cup
- Tamarind pulp ½ cup
- Jiggery 2 tbsp
- Chili powder 1 tsp
- Salt ½ tsp
- For Green Chutney:
- Mint leaves 1 cup
- Coriander leaves ½ cup
- Onion 2 tbsp
- Sugar 1 tsp
- Salt ¼ tsp
- Green chilies 3
- Lemon juice ¼ cup
Cooking Directions
For Date Tamarind Chutney:
Remove seeds from dates.
Add tamarind pulp, jiggery, chili powder and salt with 1 cup water, cook for 20 minutes till thick.
Cool, blend and use.
For Green Chutney:
Put all in a blender and blend till smooth.
For Papadi:
Mix altogether flour, salt, oil 1 tbsp knead with enough water to make dough, knead well.
Roll out the dough to a large circle.
Cut out small rounds using cookie cutter.
Prick each papadi well.
Deep fry in hot oil on medium flame until golden and crisp.
Cool and store.
To Serve:
Combine papadi with date tamarind chutney, green chutney and salt in a large serving bowl, mix well.
Top with potatoes, yogurt, sprinkle chat masala, cumin and chili powder.
Serve immediately, garnish with coriander and sev.
