Recipe for Qandhari Mutton
Ingredients
- Mutton 1/2 kg
- All whole spices 1 tbsp
- Clarified butter 1/2 cup
- Onion 2-3 (chopped)
- Ginger paste 1 tbsp
- Garlic paste 1 tbsp
- Pomegranate juice 2 large mugs
- Yogurt 1 bowl
- Red chili powder 1 tsp
- Coriander powder 1 tbsp
- Mace 1/4 tsp
- Cardamom powder 1/4 tsp
- Milk 1 glass
- Cumin 1 tsp
- Saffron strand 4,5
- Salt to taste
- Coriander and mint leaves for garnish
Cooking Directions
Add saffron strands in milk and let it dissolve.
In a bowl put mutton and pomegranate juice and marinate for 6-7 hour.
In cooking pan add clarified butter add whole spices and cumin seed.
Add onion and fry till golden brown.
Now add ginger garlic paste and fry 2 minutes.
Add chili powder, coriander powder and mutton with juice fry it well till meat turn color.
Also add all spice powder, mace, salt, and cardamom powder mix well.
Add yogurt cook for a while add saffron milk mix and cover the lid and let it cook until mutton tenderize well.
Dish out and garnish with coriander and mint leaves and serve with chappati or naan.
