Recipe for Bengun With Yogurt Sauce
Ingredients
- Eggplant 4
- Fresh Milk 1 cup
- Yogurt 3 cup
- Sugar 1 tsp
- Corn flour 1 tbsp
- Red chili 1 tbsp
- Ginger garlic paste 1 tbsp
- Salt to taste
- For Bigar:
- Oil 1 cup
- Whole red chili
- Curry leaves few
- Fenugreek seeds 4-5
- Cumin seeds 1 tsp
Cooking Directions
Slice the eggplant and deep fry them till they are golden brown.
Take some oil in the pan, add in ½ cup oil and 1 tbsp ginger garlic paste, 1 tbsp red chili and salt.
Add the eggplant in it. In 3 cups of yogurt add in 1 tbsp corn flour, 1 tsp sugar and 1 cup fresh milk. Beat it.
In a big dish add in the yogurt and layer the eggplant then layer it with yogurt. In the end, put some oil, add in 1 tsp cumin, 6 whole red chilies, curry leaves and 4-5 fenugreek seeds.
Saute it and add it in the dish.
