Recipe for Triple Chocolate Parfaits
Ingredients
- Dark chocolate 9 oz
- White chocolate 9 oz
- Milk chocolate 9 oz
- Cream 560 ml
- Egg whites 9
- Chocolate, grated to decorate
Cooking Directions
Melt each chocolate on a double boiler in separate bowls, set aside, when cold divide the whipped cream in thirds and add in the chocolates separately. In a separate clean bowl whisk the egg whites till stiff but not dry.
Fold 1/3 of the whites a little at a time in each chocolate mixture. Grease very lightly a spring form tin with oil or make the parfaits in glasses.
Pour dark chocolate mousse in a single layer cool little in fridge, then top with the white chocolate mixture cool and then the milk chocolate mixture.
Freeze till set and serve directly from the glasses or slice in wedges from the tin. Top with grated chocolate before serving.
