Recipe for Cookies and cream ice-cream sundaes
Ingredients
- 1/4 cup brown sugar
- 1 tablespoon golden syrup
- 10g butter
- 1 1/2 cups thickened cream
- 100g 70% cocoa dark chocolate, chopped
- 100g red glace cherries
- 1 litre cookies and cream ice-cream
- 2 tablespoons crushed peanuts
- Mini Oreo biscuits, roughly broken, to serve
Cooking Directions
Place sugar, golden syrup, butter and 1/2 cup cream in a small saucepan over medium heat. Cook, stirring for 3 to 4 minutes or until mixture comes to the boil.
Boil for 1 minute, Remove from heat. Add chocolate. Stir until chocolate has melted and mixture is smooth and glossy. Set aside to cool.
Using an electric mixer, beat remaining cream until soft peaks form. Halve cherries.
Divide scoops of ice-cream between eight serving dishes. Top with sauce, cream, peanuts, cherries and biscuits. Serve immediately.
