Recipe for Corn-Capsicum Curry
Ingredients
- Corn seeds- Boiled- 1 cup
- Green bell peppers-1 cup-finely chopped
- Onions-1/2 cup- finely chopped
- Tomatoes- 1 cup- puree
- Salt to taste
- Garam masala
- Garlic- 3 cloves finely minced
- Turmeric-1/2 tbsp.
- Red chilli powder- 1 tbsp
- Coriander powder-1/2 tbs
- mustard seeds
- cumin seeds
- Cilantro-coriander for garnishing
- OIl- 2-3 tbsp.
Cooking Directions
Take a flat pan and add oil. Lit the stove and add mustard seeds, cumin seeds to it. As temperature rises, these seeds will start popping.
Then to this add garlic and onion. let them roast for few minutes till they are golden brown. Then add the tomatoes puree and bell peppers.
To this add turmeric, red chilli powder, garam masala and coriander powder. Salt to taste. Let this fry for sometime and let the oil separate from the mix.
Once that happens add the corn and let it simmer for sometime again. You’ll see boils appearing on it.
If you feel the mix is little watery, you can add 1 tbsp of curd/cream to thick it little (optional)
Garnish it with cilantro and serve with parantha or rice.
