Recipe for CORN CAKES WITH BLUEBERRY BANANA COMPOTE
Ingredients
- 2 cups fresh or thawed frozen blueberries
- 2 bananas, sliced
- 1/2 cup honey
- 1 tsp ground cinnamon
- 2 cups yellow cornmeal
- 1 cup flour
- 1 Tbsp sugar
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp salt
- 4 large eggs
- 2 cups buttermilk
- 2 cups fresh or thawed frozen corn kernels
- 1 Tbsp butter
Cooking Directions
Preheat oven to 350°F. In a small roasting pan, combine blueberries, bananas, honey, and cinnamon. Bake 30 minutes, stirring occasionally.
Mix together cornmeal, flour, sugar, baking powder, baking soda, salt.
In a separate bowl whisk together eggs and buttermilk. Gently whisk together the two mixtures. Fold in corn kernels.
Bring a griddle or large skillet to medium heat. Melt butter in skillet. Drop batter onto griddle to form 4- to 5-inch pancakes.
Cook until bubbles on top burst (about 2 minutes), flip and cook until light brown (about 1 minute or more). Top with blueberry banana compote.
