Recipe for Basic Fried Rice

Ingredients

  • Spring Onions- 1 or 2
  • Eggs- 2
  • Salt- 1 teaspoon
  • Pepper to taste
  • Oil- 4 tablespoons (for stir-frying, or as needed)
  • Cooked rice- 4 cups
  • Light soy sauce or oyster sauce- 1 or 2 tablespoons

Cooking Directions

Wash and finely chop the spring onion. Lightly beat the eggs with salt and pepper.

Heat a wok and add 2 tablespoons of oil. When the oil is hot, add the eggs.

Cook, stirring until they are lightly scrambled and before it becomes too dry. Remove the eggs and clean out the pan.

In the same pan add 2 tablespoons of oil. Then add the rice.
Stir-fry for a few minutes using chopsticks or a wooden spoon. Stir in the soy sauce or oyster sauce as desired.

When the rice is heated through, add the scrambled eggs back into the pan. Mix thoroughly. Stir in the spring onion. Serve hot.
