Recipe for Frosty Banana Sponge
Ingredients
- Filling for sponge cake:
- Sponge cake 1 medium sized
- Cream 150 ml
- Bananas 3-4
- Cherries, glazed 9
- Lemon juice of 1
- Melted chocolate for garnishing
- For frosting:
- Sugar, granulated 350 gm
- Egg whites, stiffly beaten 2
- Water 150 ml
- Cream of tartar 1 pinch
Cooking Directions
Cut two layers of the sponge. Dip banana in lemon juice to avoid discoloring. Sweeten to taste.
Mash the bananas and fill the sponge with banana and whipped cream, save a few slices for garnishing, if you like.
Replace sponge cake layers after filling.
For frosting, put sugar and water into a saucepan.Stir till sugar is dissolved. Boil rapidly until mixture reaches 115 degree C.
Add cream of tartar and beat until it starts to thicken.
Pour over stiffly beaten egg-whites.
Mix and spread over sponge, garnish with glazed cherries and melted chocolate.
