Recipe for CHICKEN QUORMA
Ingredients
- CHICKEN cut into 1x8 22 kg
- COPRA 500 grams
- ONION sliced 3kg
- GINGER crushed 200 grams
- GARLIC crushed 200 grams
- RED CHILLES 150 grams
- CURD 03 kg
- CORIANDER powder 350 grams
- POPPY SEEDS 225 grams
- GREEN CHILLIES 30 grams
- CINNAMON15 grams
- CLOVES 15grams
- CARDAMOM 15grams
- PEPPER CORN 15grams
- FAT OR OIL 01kg
Cooking Directions
Wash and soak meat in curd for half an hour.
Grind together poppy seeds, copra, garlic, ginger, coriander powder, red chilies (seeds removed) and half of onion. Heat fat and fry remaining onions.
Add ground masala and chicken pcs. Fry for about 15
minutes.
Add remaining curd and tapwater and cook till meat is tender.
Add cinnamon, cloves, cardamom roasted and powdered.
Cook for 5 – 10 minutes more and serve hot ;
