Recipe for Coconut Rice
Ingredients
- 1/2 cup coconut (grated)
- 3 cloves
- 2 cups Water
- 1 cinnamon
- 2 cups rice
- 3 cardamoms
- to taste Salt
- pinch turmeric (diluted in 1 tbsp of coconut milk)
Cooking Directions
In a grinder grind coconut and little hot water
Squeeze through a muslin clothes to extract milk.(
Repeat this process two times until you have 2 cups of coconut milk Keep it aside).
In a pressure cooker, fry whole spices and rice in clarified butter until the rice begins to stick to the pan.
Add water and coconut milk and stir well.
Add salt and the diluted turmeric.
Cook under pressure for 5 minutes
