Recipe for CHICKEN BIHARI BOTI
Ingredients
- 1 kilo Chicken boneless cubed
- 3 tsps Red chili flakes
- 2 tsps Kashmiri red chilies/ Paprika powder
- 1 tsp Hot spice powder
- 1.1/2 tsp Salt
- 1 tsp Ginger paste
- 1 tsp Garlic paste
- 1 tsp poppy seed paste or powder
- 1 tsp Raw papaya paste/ meat tenderizer powder
- 2 onion sliced
- 2 tsps Black pepper crushed
- 3 tbsps yogurt
- 4 tbsps Mustard oil
Cooking Directions
Fry the onions in the oil till soft. Drain on paper towels and grind to a smooth paste.
Mix the onion paste, all above mentioned spices or Bihari masala powder with the yogurt and add the chicken cubed to this mix.
Add salt to taste and set aside for 8-10 hours in the refrigerator.
Add the raw papaya paste to the yogurt and chicken mix about 1 hour before you are ready to cook the chicken boti.
Thread 7-8 chicken pieces onto each skewer and grill till cooked.
While grilling, gradually pour left over marinated spice mixture on chicken pieces.
Serve immediately with piping hot Naans and tamarind chutney.
