• 1 kilo whole chicken
• 1 lemon
• 1 tbsp salt
• 1 pod garlic, cut in half across the centre
• 1 onion, halved
• Olive oil to drizzle
• 1 tsp black pepper, crushed

To roast the chicken place it in a roasting pan and rub it with salt and squeeze half a lemon on it, put garlic, onion and remaining lemon in the cavity.

Season chicken with freshly ground black pepper and drizzle olive oil all over it. Roast at 180 degrees C for an hour.
