Recipe for FAST-FIX PEA DIP
Ingredients
- 1tbsp olive oil
- 2 large onions, chopped
- 1 clove garlic, peeled
- 2tbsp water
- Salt and pepper, to taste
- 300gm frozen peas
- 2 cup light sour cream
- 1/4 cup fresh flat-leaf parsley leaves
- 3tbsp roasted, salted almonds
- 3tbsp mayonnaise1tbsp fresh lemon juice
- 1tbsp fresh tarragon leaves or 1tsp dried tarragon, plus extra for garnish
Cooking Directions
Heat oil over a medium flame. Add the onions, garlic, water and 1tsp salt.
Cover and cook for 4-6 minutes or until soft and browned.
Add peas, cook for 5 minutes. Remove from heat; cool.
In a food processor, pulse the onion mixture, sour cream, parsley, almonds, mayonnaise, lemon juice, tarragon, 1.4 tsp salt, and 1tsp pepper until smooth.
Transfer to a bowl. Refrigerate for at least 1 hour (or until cold) or up to 1 day.
Garnish with almonds and tarragon. Serve with assorted vegetables.
