Recipe for Deep Fried Fish With Thai Chilli Sauce
Ingredients
- Red snapper whole 800 gms
- Fish sauce 25 ml
- Refined flour 100 gms
- Oil 150 ml
- For chilli sauce:
- Oil 6 tbsp
- Red onion 200 gms
- Garlic peeled 150 gms
- Big red chillies 200 gms
- Eye chillies 5 birds
- Tomato ketchup 150 gms
- Salt 25 gms
- Sugar 10 gms
- White vinegar 200 ml
- Lemongrass 1 sprig
- Lime leaves 5
Cooking Directions
For chilli sauce:
Heat half the oil in wok and saute onion, garlic fresh red chillies and bird''s eye chillies.
Saute till soft. Take it off the heat and let it cool down.
Puree it in a blender.
In a thick-bottomed pan, heat the remaining oil and add chilli paste, tomato ketchup, salt, sugar, white vinegar, lemongrass, lime leaves and cook till the oil appears on top.
Keep aside.
For Fish:
Clean the fish and give a small cut on top without cuting across.
Pour fish sauce over the fish and leave aside for 20 minutes.
Now dust the fish with the flour and deep fry in medium hot oil till the fish is cooked and golden brown in colour.
Pour chilli sauce over the fish and serve with jasmine rice.
