Recipe for Fish & Chips
Ingredients
- 1 cup all purpose flour
- Salt to taste
- 1/4 cup corn flour
- 1/4 teaspoon any spice you like (optional)
- 1/2 cup corn flour for dredging
- 1 teaspoon baking powder
- 1/2 teaspoon black pepper
- 1 1/4 cup cold water
- 4 fish fillets (any type of fish you like, best
- are tilapia, cod, monkfish, Nile perch)
- Oil for deep frying
Cooking Directions
Mix flour, 1/4 cup corn flour, salt, pepper, your choice of spice, baking powder and water well to make a batter. Leave it to rest for at least 15 minutes.
In a frying pan, heat oil then turn heat to medium.
Dredge the fish fillet in 1/2 cup corn flour; this will make the batter stick to the fish.
Dip the fish in the batter, then in oil for 5 - 6 minutes depending on how thick or thin the fillet is. Fry the fish in batches, so oil temperature won''t drop.
Remove fish from oil and drain on kitchen paper.
Serve with lemon wedges chips and garlic sauce.
