Recipe for Fish Salad
Ingredients
- Fish fillet 1
- Salt and pepper to taste
- Lemon juice to taste
- Olive oil to taste
- For red pepper mayonnaise:
- Egg yolks 2 large
- Dijon mustard 1 tbsp
- Olive oil 250 ml
- Balsamic vinegar 2 tbsp
- Sugar 1 tsp
- Lemon juice 1 tbsp
- Red pepper, roasted 2
Cooking Directions
Marinate fish in salt, pepper and lemon juice for 3-4 hours.
Grill till done and golden brown, basting with oil.
To prepare red pepper mayonnaise: In a food processor, blend yolks until thickened.
Add mustard.
With food processor still running, add oil in a steady stream until mixture thickens and emulsifies.
Add vinegar, sugar, salt and freshly-ground pepper to taste, lemon juice and 1 tbsp boiling water to set it.
Process red pepper until smooth and fold into mayonnaise.
Store in refrigerator in a screw-top jar until required.
Make slits on the fish and pour mayonnaise over it.
Serve warm with a fresh salad.
