Recipe for Pickled Mutton Curry
Ingredients
- Mutton 1/2 Kg
- Lemons 4
- Curry leaves few
- Whole red chillies 10
- Onions 3 (finely cut)
- Garlic 8 cloves (finely cut)
- Yogurt 1/2 cup (whisked)
- Ginger 1 tbsp (finely cut)
- Coriander seeds 1 tbsp
- Fennel seeds 1 tsp
- Onion seeds 1 tsp
- Turmeric powder 1 tsp
- Salt to taste
- Oil 1 cup
- For stuffing chillies:
- Green chillies 6 (big)
- Cumin seeds 1 tsp
- Fennel seeds 1 tsp
- Mustard seeds 1 tsp
- Coriander seeds 1/2 tbsp
- Tamarind pulp 2 tbsp
- Salt to taste
Cooking Directions
Heat oil in a pot and fry onions. Remove and dry on paper.
In the same pot, add meat, turmeric and salt and cook till water dries.
Add ginger, garlic, coriander, fennel and one cup hot water.
Cook till meat becomes tender.
Add red chillies and yogurt.
Fry and squeeze lemon in it.
Roast cumin, fennel, mustard and coriander in a shallow pan, and grind together.
Add salt and tamarind in the ground masala and stuff into green chillies.
Fry the stuffed chillies and add in the meat pot.
Add curry leaves and onions seeds and keep on dum.
